Cheap 'n easy cooking - Baja fish taco's

I needed a quick lunch today, before Mr.Cheap would go to work. As I was rummaging through my freezer, I found a bag of whiting fillets with a recipe on the bag for fish taco's. I didn't follow their recipe at all, but it did inspire me to make these babies.

They were so delicious I promptly forgot to take a picture. Oops. Haha. Well, all the more reason to make them again, right?




I purchased the whiting at the local grocery store for around $5 for a two pound bag. The cabbage was $1 for three pounds. I always have salsa, mayo and yogurt on hand. And I always have the Mezzetta jalapeno slices, they're my pickle replacement. I got those at Wal-Mart for $1.72 (and I had a $1 off two coupon). Tortilla's were purchased at Aldi, eight 10" for around $1.50. I made about one third of this recipe and it fed myself, Mr.Cheap and our one-year-old son for lunch. Although our son was not too impressed with the slaw, he did like the fish. He doesn't care much for tart flavors yet.


I love it when a meal is healthy AND cheap 'n easy. Ding ding ding, winner!


Baja fish taco's

Fish:
2 lb      whiting fillets or other firm fish (tuna, salmon, pollock, cod etc.)
            flour for dredging
            seasoning for the flour (I used some salt and Old bay)

Slaw:
1         small head of green cabbage 
1/4 c   chunky salsa (I use Great Value, medium heat)
1/4 c   plain yogurt
1/4 c   mayonnaise
1/4 c   pickled jalapeno slices (I use Mezzetta tamed deli-sliced jalapenos)
           seasoning to taste (I used a dash of chili powder, garlic powder and cumin)
           splash of vinegar from the jalapenos

Assembly:

8-12 flour tortilla's

Dice the jalapeno slices finely and mix together in a large bowl with the salsa, yogurt, mayonnaise, vinegar and additional seasonings of your choice. Shred or chop the cabbage and add to the dressing. Combine and put aside.

Cut the fish into bite size pieces and dredge in the seasoned flour. The moisture from the fish will make the flour stick. Fry the fish in either a deep fryer, like the Fry Daddy (love that little thing!) or in a skillet with some oil. The fish will cook very quickly, only a few minutes. Let the fish drain on some paper towels (placed on top of old news paper, if you wan't to be extra frugal and use less paper towels).

Heat the tortilla's in the microwave or a dry skillet. Place a couple spoonfuls of slaw on the tortilla's and a couple spoonfuls of the fish. 

Serve with some hushpuppies or a side of Spanish rice.
